Mama Mandolini's Seafood Lasagna

Mama knows best... This dish is incredible! Imagine big chunks of fresh seafood covered with layers of noodles, flavorful red sauce that's then topped with bubbly brown italian cheese. This is decadence at its best, with a whole lot of soul. Dig in and mangia!  

3 pints Vodka Sauce

½ lb. cooked shrimp, tail removed

½ lb. lump crab meat

½ pound mini cooked scallops

¾ lb. lasagna noodles

2 Tbs. olive oil

1/3 lb. shredded mozzarella cheese

¾ lb. herbed ricotta cheese

½ lb. grated parmesan cheese

salt and pepper to taste

Preheat oven to 350°. Poach shrimp and scallops, drain, combine with drained crab meat and set aside. Add noodles to (salted) boiling water. Cook until barely al dente (do not overcook!). Drain and separate noodles. Spread thin layer of vodka sauce in bottom of lightly greased rectangular baking pan. Cover with layer of noodles followed by layers of shrimp/crab mixture and each of the three cheeses. Continue alternating layers, ending with layer of noodles. Top with layer of sauce and dust with Parmesan cheese. Bake 30-40 minutes until bubbly and lightly browned. Let lasagna sit for 5 minutes before cutting. Mangia!!
